It was the most flavorful chicken I ever tasted and was cooked on a hibachi grill -- or so I thought. You need to clean your hibachi grill each time you use it, especially if it's cast iron. It's easiest to clean when it's still warm, but if you're out partying, cleaning a grill might be the last thing on your mind.

Still, you should at least remove as much of the food remnants and oil off the grates that you can. Then later you can give it a proper cleaning.

Simply place your grates under hot running water and scrub them with a non-metal brush or nonabrasive scrub pad to remove any remaining food. Soap is usually not recommended, but some experts say a small amount of dish soap is okay. It's your choice.

Dry your grates thoroughly. Don't let them air dry, or you'll be looking at a thin layer of rust instead of a beautiful black finish. Then grab some paper towels and coat the grates with a thin layer of oil.

This recipe for Kofta comes from The Mediterranean Dish and is based on a traditional Egyptian preparation.

Ingredients

  • 1 onion, minced
  • 2 garlic cloves, minced
  • 2 cups parsley leaves
  • 1 pound ground beef
  • 1 pound lamb
  • 1/2 cup bread crumbs, soaked in water
  • 1 1/2 teaspoons ground allspice
  • 1/2 teaspoon each ground cardamom, sumac, nutmeg, and paprika
  • Salt and pepper to taste

Technique

Soak 10 wooden skewers for at least half an hour while preparing the rest of the recipe.

Ingredients

  • 3 pounds pork butt
  • 1/2 cup lemon-lime soda
  • 1 cup each soy sauce, vinegar, brown sugar
  • 2 teaspoon black pepper
  • 1/2 cup chopped garlic
  • 1 cup banana ketchup
  • 2 tablespoons sesame oil

Technique

Slice your pork butt into slices approximately an inch wide and a quarter of an inch thick.

Combine the lemon-lime soda, soy sauce, vinegar, brown sugar, garlic, and black pepper. Whisk to create a smooth marinade.

Place the meat and marinade in a container, mixing to distribute evenly. Let the meat marinate for at least six hours, ideally overnight.

Prepare two dozen skewers by soaking in water for at least half an hour.

Remove the meat from the marinade, straining the marinade and reserving. Skewer the meat carefully onto pre-soaked skewers.

Mix the banana ketchup and sesame oil into the reserved marinade.

Cook the skewers over medium-high flame, turning and basting with the banana ketchup marinade every minute. Cook until done, around five minutes or so. Serve warm.

For a sweet barbeque sauce, cook the basting mixture on medium for approximately 10 minutes before serving on the side.


Salmon kebabs

  • 1 1/2 pounds salmon fillet, deboned, skinless
  • 2 tablespoons fresh oregano, chopped
